Single Serve Microwave Brownies

  • Oil - 2 TBSP I used vegetable oil
  • Water - 2 TBSP
  • Vanilla extract - 1/4 tsp
  • Sugar - 2 TBSP
  • Cocoa Powder - 1 1/2 TBSP
  • All Purpose flour - 2 TBSP
  • Salt - a pinch
  • Chocolate Chips - 2 TBSP
  • Whipped cream or Ice cream - to serve optional


  • In a a small bowl, sift the flour and the cocoa together. You could just whisk them together, but I like to sift the cocoa as they lump up and sifting makes a smooth brownie.
  • In the baking dish (microwavable dish) that we are going to make the brownie, measure the oil and the water. Add the vanilla extract to it and mix.
  • Now add the salt and the sifted cocoa/flour mixture and gently mix to combine.
  • Add 1 TBSP of chocolate chip and mix. Top with the remaining chocolate chip and microwave it in high for one minute.
  • Insert a toothpick to see if it cooked inside and if needed, microwave it for 15 more seconds.
  • Serve as is or top with ice cream or whipped cream and serve!
