Simple Garden Salad Recipe
I have made several salads in the past like this lentil salad which is high in protein or this simple corn salad which is great as a snack. In spite of making salads routinely at home, I still find my boys always enjoying the simple garden salad that they serve as a side in many restaurants.

- 4 cups Lettuce or basic salad mix
- ¼ cup Red onion thinly sliced
- 15 thin slices Cucumber
- 15 Cherry tomatoes
- few Croutons
- Salad dressing as per your taste
- If starting with a whole head of lettuce, shred them into bite size pieces. I used a bag of chopped salad, that had a mix of lettuce, carrot and purple cabbage.
- Measure out about 4 cups of the lettuce mix into a large bowl.
- Add the rest of the vegetables to the mix. You could also use broccoli, bell pepper along with cucumbers and tomatoes.
- Add your choice of salad dressing and mix well. I used store bought creamy Vidalia onion dressing this time.
- Top with croutons and serve immediately. I also add shredded cheese at times.
