This one pot Vegetable Masala Khichdi (Instant Pot or Pressure cooker) is the perfect comfort meal for any season. This Gluten free masala khichdi is a complete balanced meal made with rice, lentils, mixed vegetables and assorted spices.

– Rice – Sabut Masoor dal – Onion – Tomato – Potato  – Carrot  –Green peas – Ginger – Garlic – Oil or ghee – Salt + whole spices + spice powder

– Wash and soak the rice and dal. – Chop all the vegetables and have them ready. – Press the saute function in the instant pot and add oil or ghee to the inner pot. – Add the whole spices, let them become aromatic.

Steps 1-4

– Add the sliced onions and saute until translucent. Add the grated ginger and garlic and the rest of the vegetables. – Add the spice powders. Give it a good mix and let it fry. – Add the drained soaked rice and dal to the Instant Pot. Mix well and add water.  – Pressure cook.

Steps 5-8

– Serve the vegetable masala khichdi hot with a drizzle of ghee.
