Single Serve Microwave Brownie

This week's theme of single-serve desserts has really brought me out of my comfort zone. I am a believer of traditional baking and this week I have made up my mind to bake two of our favorite things in the microwave.

I am so glad that the experiment worked out wonderfully and after yesterday's Single-serve Carrot cake, my single-serve brownie has come out exceptionally good. The classic brownies that I bake are still the best ever recipe and if making a large batch, I will look nowhere other than my recipe. It works like a charm every time I bake it.

I use eggs in the classic brownies and there are days when we don't eat eggs and that is when I crave brownies. This Single Serve Microwave Brownie is eggless and also vegan if we are careful to choose the chocolate chips.

I whipped the brownie batter in the same pan I baked it in. Myself and the boys had a blast scooping out the warm brownie topped with cold ice cream. If you know me, you would know that I am not a big chocolate or ice cream fan. The only exception to this is the brownie/ice cream combination.

I absolutely love it and never miss a chance to eat them together. With this simple Single Serve Microwave Brownie recipe, I now have the option to please my late-night dessert cravings. The brownie had the perfect texture and the chocolate chips made it extra chocolaty. If you like nuts, add any nuts of your choice to the batter.

Preparation time - 5 minutes
Baking time - 1 minute 15 seconds
Difficulty level - easy

Ingredients to make Single Serve Microwave Brownie - Makes 1 serving

  • Oil - 2 tablespoon ( I used vegetable oil)
  • Water - 2 TBSP
  • Vanilla extract - ¼ tsp
  • Sugar - 2 TBSP
  • Cocoa Powder - 1 ½ TBSP
  • All Purpose flour - 2 TBSP
  • Salt - a pinch
  • Chocolate Chips - 2 TBSP
  • Whipped cream or Ice cream - to serve (optional)

Procedure

  • In a small bowl, sift the flour and the cocoa together. You could just whisk them together, but I like to sift the cocoa as they lump up and sifting makes a smooth brownie.
  • Add the sugar to the sifted flour mixture.
  • In the baking dish (microwavable dish) that we are going to make the brownie, measure the oil and the water. Add the vanilla extract to it and mix.
  • Now add the salt and the sifted flour mixture and gently mix to combine.
Mixing ingredients
  • Add 1 tablespoon of chocolate chip and mix. Top with the remaining chocolate chip and microwave it on high for one minute.
Adding Chocolate chips
  • Insert a toothpick to see if it cooked inside and if needed, microwave it for 15 more seconds.
  • Serve as is or top with ice cream or whipped cream and serve!
